Cheesy Potato Wedges

   I came across this post on pincookie, and found Cheesy Potato Wedges...they sounded soo good I just had to make them! The secret is in the sauce. for real. The sauce is what made these things good. Seriously. I ended up eating a baked potato for lunch for the next few days until this sauce was used up..it was that good! And it's super easy!

To make the sauce, you just need to mix together:
1 cup sour cream
1/2 cup ranch dressing
1/4 cup milk
(I added some Cajun seasoning also)

You have your potatoes, washed already, peeled or unpeeled-whichever you prefer- and you thinly slice them up. Lay them on a greased cookie sheet-site calls for olive oil but I just sprayed my pan with Crisco butter flavored cooking spray and then sprayed some more on the top of the potato slices. I sprinkled a little bit of black pepper and some garlic powder (next time i will do salt instead), I baked them in the oven at 350 degrees until the potatoes were soft with a slightly golden brown to them. I then pulled them out of the oven and spread the special sauce across the potatoes. Then sprinkled bacon bits, green peppers and shredded cheddar cheese across it all. I put it back in the oven til all was melted together and that's all there is to it!  Came out so delicious!! Love this sauce and will use it in the future too. GREAT for baked potatoes!
